In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil, then reduce heat and cover. Cook for 18 minutes or until rice is tender.
In a skillet, heat the canola oil over medium heat. Add the cooked rice and press it down to create an even layer. Cook until the bottom is crispy, about 5-7 minutes. Flip and cook the other side.
Once both sides are crispy, pour the coconut milk over the rice and sprinkle with chopped scallions. Serve immediately.
Notes
For added flavor, you can mix in herbs or spices of your choice before cooking.
