Ingredients
  

For the Filling

  • 2 large sweet potatoes (about 2 cups mashed)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup evaporated milk
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the Crust

  • 1 9-inch unbaked pie crust

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Peel and boil sweet potatoes until tender. Drain and mash them.
  • In a mixing bowl, combine mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  • Pour the filling into the unbaked pie crust.
  • Bake for 50-55 minutes, or until the filling is set.
  • Let the pie cool before serving.

Notes

For a smoother texture, blend the filling with a hand mixer. Serve with whipped cream if desired.
