For the Balsamic Maple Dressing:
- ½ cup olive oil
- ¼ cup balsamic vinegar good quality
- 1 clove garlic crushed
- 2 tablespoon pure maple syrup
- ½ teaspoon dried thyme
- pinch of salt & pepper
For the Salad:
- 8 cups lettuce mix of spinach and butter lettuce
- 1 cup fresh blueberries
- 1 cup fresh strawberries quartered
- 8 oz fresh mozzarella sliced and cut (or hand torn) into 1 inch pieces
- 4 tablespoon pine nuts
- ¼ cup fresh basil thinly sliced
Prepare the dressing by whisking together olive oil, balsamic vinegar, crushed garlic, maple syrup, dried thyme, salt, and pepper in a small bowl.
In a large salad bowl, combine the lettuce, blueberries, strawberries, and mozzarella.
Drizzle the dressing over the salad and toss gently to coat.
Sprinkle pine nuts and fresh basil on top.
Serve immediately and enjoy.
