Heat olive oil in a skillet over medium heat. Add diced sweet potatoes and cook for about 10 minutes until they start to soften.
Add sliced red onion, corn, shredded chicken, BBQ sauce, salt, black pepper, and smoked paprika. Stir to combine and cook for an additional 15 minutes.
Sprinkle shredded cheddar cheese on top and cover the skillet until the cheese melts.
Garnish with chopped green onions before serving.
