For the Salmon Bites

For the Bang Bang Sauce

mayonnaise

For the Bowls

cooked jasmine rice
or cauliflower rice

Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
Coat salmon pieces with panko breadcrumbs and place them on the baking sheet. Drizzle with olive oil or spray lightly.
Bake for 12-15 minutes, flipping halfway, until crispy and cooked through.
While salmon bakes, mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a bowl to make the bang bang sauce.
Divide cooked rice among bowls. Top with salmon bites, shredded cabbage, avocado, carrots, and green onions.
Drizzle with bang bang sauce and garnish with cilantro and sesame seeds.
Notes
For a lighter option, use cauliflower rice instead of jasmine rice. Adjust the sriracha to your preferred spice level.
