Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1 tablespoon olive oil or spray for crisping

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tablespoon sweet chili sauce
  • 1 tablespoon sriracha adjust to spice level
  • 1 teaspoon honey optional
  • ½ lime juice

For the Bowls

  • 2 cups cooked jasmine rice or cauliflower rice
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • fresh cilantro and sesame seeds for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, toss salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
  • Coat salmon pieces with panko breadcrumbs and place them on the baking sheet. Drizzle with olive oil or spray lightly.
  • Bake for 12-15 minutes, flipping halfway, until crispy and cooked through.
  • While salmon bakes, mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a bowl to make the bang bang sauce.
  • Divide cooked rice among bowls. Top with salmon bites, shredded cabbage, avocado, carrots, and green onions.
  • Drizzle with bang bang sauce and garnish with cilantro and sesame seeds.

Notes

For a lighter option, use cauliflower rice instead of jasmine rice. Adjust the sriracha to your preferred spice level.
