In a baking dish, place the chicken breasts. Season with salt, pepper, olive oil, balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic. Mix well.
Add the halved cherry tomatoes around the chicken in the dish.
Bake for 25 minutes or until the chicken is cooked through.
Remove from the oven and sprinkle shredded mozzarella cheese over the chicken. Return to the oven for an additional 5 minutes, until the cheese is melted.
Garnish with fresh basil or parsley if desired before serving.
