Ingredients
  

For the Meatballs

  • 1 lb ground chicken
  • ½ cup ricotta cheese
  • ¼ cup parmesan cheese grated
  • 1 large egg
  • 1 teaspoon garlic powder

For the Spinach Alfredo Sauce

  • 2 cups spinach fresh, chopped
  • 1 cup heavy cream
  • ½ cup parmesan cheese grated
  • 1 clove garlic minced

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix ground chicken, ricotta cheese, parmesan cheese, egg, and garlic powder. Form into meatballs.
  • Place meatballs on a baking sheet and bake for 25 minutes until cooked through.
  • In a saucepan, heat heavy cream and add spinach, parmesan cheese, and minced garlic. Cook until spinach wilts.
  • Serve the meatballs with the spinach Alfredo sauce over the top.

Notes

You can substitute ground turkey for a lighter option.
