Ingredients
  

Bread Base

  • 1 lb loaf Sourdough Or French Bread, cut into chunks

Egg Mixture

  • 8 large eggs
  • 2 cups milk (whole or 2%) (480ml)
  • ½ cup heavy whipping cream (120ml)
  • ½ cup sugar (104g)
  • ¼ cup light brown sugar, unpacked (36g)
  • 2 teaspoon vanilla extract
  • 1 ½ teaspoon ground cinnamon

Bananas

  • 6-7 medium sized bananas, chopped

Streusel Topping

  • ¾ cup all-purpose flour (98g)
  • ¾ cup firmly packed brown sugar (169g)
  • 1 teaspoon cinnamon
  • ½ cup salted butter, cut into pieces (112g)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, whisk together the eggs, milk, heavy cream, sugar, brown sugar, vanilla extract, and cinnamon.
  • Place the bread chunks in a greased baking dish and pour the egg mixture over the bread. Ensure all pieces are soaked.
  • Chop the bananas and layer them on top of the soaked bread mixture.
  • For the streusel topping, mix flour, brown sugar, and cinnamon in a bowl. Cut in the butter until crumbly. Sprinkle over the bananas.
  • Bake for 45 minutes or until the top is golden brown and the egg mixture is set.
  • Let cool for a few minutes before serving.

Notes

You can substitute different types of bread or add nuts to the streusel for extra texture.
