Ingredients
  

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter melted
  • 2 cups peeled and chopped apples Granny Smith or Honeycrisp
  • ¼ cup light brown sugar packed

For the Glaze:

  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, whisk milk, eggs, vanilla, and melted butter.
  • Pour wet ingredients into dry and stir until just combined. Don’t overmix.
  • Fold in apples and brown sugar gently.
  • Drop spoonfuls of batter onto baking sheet, spaced 2 inches apart.
  • Bake 15–18 minutes, until golden and a toothpick comes out clean.
  • For the glaze, whisk powdered sugar, milk, and vanilla until smooth.
  • Drizzle glaze over slightly cooled fritters and serve warm.

Notes

  • Use tart apples for a perfect sweet-tart balance.
  • Don’t overmix the batter to keep fritters light and fluffy.
  • For extra crunch, mix in chopped pecans or walnuts.
