Ingredients
  

  • ½ avocado sliced
  • 4 slices mozzarella cheese
  • 4 cherry tomatoes sliced in half
  • 2 slices multigrain bread such as Ezekiel sprouted grain bread
  • Butter for spreading

Instructions
 

  • Heat a skillet over medium heat.
  • Butter one side of each bread slice.
  • Place one slice of bread, buttered side down, in the skillet.
  • Layer with mozzarella, avocado, and tomatoes.
  • Top with the second bread slice, buttered side up.
  • Cook until golden brown, then flip and cook the other side until cheese melts.
  • Serve warm.

  • Use ripe avocado for best texture.
  • Adjust cheese quantity to taste.
