In a skillet, heat sesame oil over medium heat. Add chicken and cook until no longer pink. Stir in soy sauce, hoisin sauce, teriyaki sauce, honey, garlic, and ginger. Cook for 2-3 minutes.
In a bowl, combine cabbage, carrots, green onions, rice vinegar, sesame oil, sugar, and salt. Mix well.
Preheat oven to 350°F (175°C). Arrange wonton wrappers on a baking sheet and spray with nonstick cooking spray. Bake for 8-10 minutes until golden.
Fill each wonton shell with chicken mixture and top with slaw. Add optional toppings if desired.
