In a bowl, mix the apple pie filling with ground cinnamon and set aside.
In a saucepan, melt the butter and stir in white sugar, brown sugar, water, and vanilla. Bring to a boil, then reduce heat and let simmer for 5 minutes.
Place a portion of the apple pie filling in the center of each tortilla, roll them up, and place them in a baking dish.
Pour the sauce over the rolled enchiladas.
Bake in the preheated oven for 25-30 minutes until golden.
