Ingredients
  

For the Filling

  • 1 can apple pie filling 21 ounces

For the Sauce

  • 1 teaspoon ground cinnamon
  • ½ cup butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ cup water
  • 1 teaspoon vanilla

For the Tortillas

  • 6 pieces flour tortillas 8 inch

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the apple pie filling with ground cinnamon and set aside.
  • In a saucepan, melt the butter and stir in white sugar, brown sugar, water, and vanilla. Bring to a boil, then reduce heat and let simmer for 5 minutes.
  • Place a portion of the apple pie filling in the center of each tortilla, roll them up, and place them in a baking dish.
  • Pour the sauce over the rolled enchiladas.
  • Bake in the preheated oven for 25-30 minutes until golden.

Notes

Serve warm with ice cream or whipped cream for added flavor.
