Ingredients
  

Dry Ingredients

  • 1 ¾ cups flour bob’s red mill 1 to 1 or similar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • teaspoon ground nutmeg

Wet Ingredients

  • ½ cup unsalted butter at room temperature
  • cup packed light brown sugar
  • ½ cup granulated sugar
  • cup unsweetened applesauce at room temperature
  • ½ teaspoon vanilla extract

Add-ins

  • cup white chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, cream butter and sugars until light and fluffy. Mix in applesauce and vanilla.
  • Gradually add dry ingredients to wet ingredients, mixing until combined. Fold in white chocolate chips.
  • Scoop dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden.
  • Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days.
