Ingredients
  

Bread Batter

  • ½ cup apple cider
  • ½ cup unsalted butter at room temperature
  • 1 cup light brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs at room temperature
  • ¼ cup unsweetened applesauce
  • 3 tablespoons plain Greek yogurt
  • 2 cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg

Topping

  • ¼ cup granulated sugar
  • ½ tablespoon ground cinnamon
  • 2 tablespoons unsalted butter melted

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate large bowl, cream the butter and brown sugar until light and fluffy. Add the vanilla, eggs, applesauce, and yogurt. Mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider. Mix until just combined.
  • Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • While the bread bakes, mix the granulated sugar and cinnamon for the topping in a small bowl.
  • Once the bread is done, let it cool in the pan for 10 minutes. Then, brush the melted butter over the top and sprinkle with the cinnamon sugar mixture.
  • Let the bread cool completely before slicing and serving.

Notes

For extra flavor, reduce the apple cider by simmering it in a small saucepan until it thickens slightly before adding to the batter.
