- For the Crust: 1¼ cups graham cracker crumbs about 10 full sheets
- 3 tablespoon granulated sugar
- 5 tablespoon unsalted butter melted
- For the Filling: 16 oz 450 g cream cheese, softened
- ¾ cup powdered sugar icing sugar, sifted
- 1 teaspoon vanilla extract
- 1 cup cold heavy cream or thickened cream
- For the Red Swirl: 1 cup fresh strawberries hulled and chopped
- 2 tablespoon granulated sugar
- For the Blue Swirl: 1 cup fresh blueberries
- 2 tablespoon granulated sugar
Preheat your oven to 350°F (175°C).
Make the Crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into a 9-inch pie pan and bake for 8 minutes. Let it cool.
Prepare the Swirls: Blend strawberries with sugar until smooth for the red swirl. Repeat with blueberries for the blue swirl.
Make the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately, then fold into the cream cheese mixture.
Assemble the Pie: Spread the filling into the crust. Drop spoonfuls of the red and blue swirl mixtures on top. Use a toothpick to swirl gently.
