- Sugar Cookie Crust:1 ¼ cups plus 2 tablespoons 6 ¾ oz/195 g all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup 4 oz/115 g butter, softened
- ¾ cup 6 oz/170 g plus ¼ cup (2 oz/57 g) granulated sugar
- 1 large egg at room temperature
- ½ teaspoon vanilla extract
- Cream Cheese Topping:1 cup 8 oz/225 g block cream cheese, at room temperature
- 1 ⅓ cups 5 ⅓ oz/152 g powdered sugar, sifted
- ½ teaspoon vanilla extract
- ¼ cup 2 fl oz/60 ml heavy whipping cream
- Fruit Topping:2½ cups 12 ½ oz/350 g mixed fresh berries
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the sugar cookie crust by mixing flour, baking soda, baking powder, and salt in a bowl.
In another bowl, beat butter and sugar until light and fluffy. Add egg and vanilla.
Gradually mix dry ingredients into wet ingredients until combined.
