Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon for topping
  • 2 tablespoon granulated sugar for topping

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Spread the dough evenly into the prepared pan.
  • Combine the cinnamon and sugar for the topping and sprinkle it over the dough.
  • Bake for 20-25 minutes or until the edges are golden brown.
  • Let cool before cutting into bars.

Notes

  • For extra chewiness, slightly underbake the bars.
