A hearty and flavorful dish combining seasoned ground beef, beans, corn, and cheese served over crispy Fritos corn chips.

- 1 pound lean ground beef
- 1 yellow onion, finely diced
- 1 packet taco seasoning or 3 tablespoons homemade taco seasoning
- ½ cup water
- 1 tablespoon chili powder
- 1 (10 ounce) can diced tomatoes with chilies (such as Rotel) or salsa
- 1 ½ cups tomato sauce
- 1 cup frozen corn kernels, thawed
- 1 (15 ounce) can red kidney beans, drained and rinsed
- 1 (9.25 ounce) bag Fritos® corn chips, divided
- 2 cups shredded Mexican cheese blend, divided
- Sour cream for serving (optional)
Instructions
- Brown the ground beef with the diced onion in a large skillet over medium heat.
- Drain excess fat and stir in the taco seasoning, water, and chili powder.
- Add the diced tomatoes, tomato sauce, corn, and kidney beans. Simmer for 10 minutes.
- Preheat the oven to 350°F (175°C).
- Spread half of the Fritos in a baking dish. Top with half of the beef mixture and half of the cheese.
- Repeat with the remaining Fritos, beef mixture, and cheese.
- Bake for 10 minutes or until the cheese is melted.
- Serve warm with sour cream if desired.
Notes
- Use homemade taco seasoning for better flavor control.
- Adjust the spice level by adding more or less chili powder.
- Replace ground beef with ground turkey for a lighter option.
