Traditional German Almond Christmas Cookies are buttery, nutty, and perfect for the holiday season. These cookies are crisp on the outside and tender inside, with a delicate almond flavor.

- 500 g all purpose flour
- 250 g unsalted butter
- 250 g sugar
- 250 g almond flour
- 30 g vanilla sugar
- 2 eggs
- 2 tsp baking soda
- Salt (to taste)
- 30 g shaved almonds (for topping)
Instructions
- Preheat your oven to 180°C (350°F).
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually mix in the all-purpose flour, almond flour, vanilla sugar, baking soda, and a pinch of salt.
- Knead the dough until smooth.
- Roll out the dough to about 1 cm thickness and cut into desired shapes.
- Place the cookies on a baking sheet lined with parchment paper.
- Sprinkle shaved almonds on top of each cookie.
- Bake for 12-15 minutes or until golden brown.
- Let cool on a wire rack before serving.
Notes
- Store in an airtight container for up to 2 weeks.
- You can replace vanilla sugar with 1 tsp vanilla extract if needed.
- For extra flavor, add a pinch of cinnamon or nutmeg.
