Description
A crunchy, sweet, and salty snack mix made with Chex cereal, nuts, and pretzels coated in a rich toffee glaze.

- 12.8 oz box Rice or Corn Chex Cereal
- 3 cups assorted nuts (pecans, almonds, peanuts, etc.)
- 3 cups pretzel thins (or mini knots)
- 1 cup unsalted butter
- 2 cups dark brown sugar
- 3/4 cup light corn syrup
- 1 tsp salt
- 2 tsp pure vanilla extract
- 1 tsp baking soda
Instructions
- Preheat oven to 250°F (120°C). Line two baking sheets with parchment paper.
- In a large bowl, combine Chex cereal, nuts, and pretzels.
- In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil, then simmer for 4 minutes, stirring constantly.
- Remove from heat and stir in vanilla and baking soda. The mixture will foam slightly.
- Pour the toffee mixture over the cereal mix and stir until evenly coated.
- Spread the mixture onto the prepared baking sheets. Bake for 45 minutes, stirring every 15 minutes.
- Let cool completely before breaking into pieces. Store in an airtight container.
Notes
- Use a large bowl to mix ingredients for even coating.
- Stir the toffee mixture constantly to prevent burning.
- Let the mix cool completely for maximum crunch.
