Ingredients

- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 ounces pasta (such as spaghetti or penne)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, garlic, oregano, salt, and black pepper.
- Spread on a baking sheet and roast for 20 minutes.
- Cook pasta according to package instructions.
- Drain pasta and mix with roasted tomatoes, ricotta, and Parmesan.
- Stir in fresh basil and lemon juice.
- Serve warm.
