Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces pasta (such as spaghetti or penne)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, garlic, oregano, salt, and black pepper.
  3. Spread on a baking sheet and roast for 20 minutes.
  4. Cook pasta according to package instructions.
  5. Drain pasta and mix with roasted tomatoes, ricotta, and Parmesan.
  6. Stir in fresh basil and lemon juice.
  7. Serve warm.
