Ingredients

  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ½ cup warm milk (about 110°F)
  • 4 tbsp unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • 1 cup raspberry preserves or jam
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp butter, melted
  • ¾ cup powdered sugar
  • 1-2 tbsp lemon juice
  • 1 tbsp milk or cream

Instructions

  1. Mix flour, yeast, sugar, and salt in a bowl.
  2. Add warm milk, softened butter, eggs, vanilla, and lemon zest. Knead until smooth.
  3. Let the dough rise until doubled in size.
  4. Mix raspberry preserves with cornstarch and water. Cook until thickened.
  5. Roll out the dough, spread the raspberry filling, and roll into a log.
  6. Place in a loaf pan and let rise again.
  7. Bake at 350°F until golden brown.
  8. Brush with melted butter and optionally drizzle with glaze.
