Soft and spiced pumpkin sugar cookies with a cinnamon-sugar coating.

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup canned pumpkin puree
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup granulated sugar (for rolling)
- 1/2 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, cream together butter and sugar until light and fluffy.
- Add the egg, pumpkin puree, and vanilla extract. Mix well.
- In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- In a small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon for rolling.
- Scoop dough into 1-inch balls, roll in the cinnamon-sugar mixture, and place on baking sheets.
- Bake for 10-12 minutes or until edges are set. Let cool before serving.
Notes
- Store cookies in an airtight container for up to 5 days.
- For a softer texture, slightly underbake the cookies.
