Ingredients

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
  2. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, egg, milk, melted butter, and vanilla.
  3. Combine wet and dry ingredients until just mixed.
  4. Heat oil to 350°F (175°C).
  5. Drop spoonfuls of batter into the oil and fry until golden, about 2-3 minutes per side.
  6. Drain on paper towels and dust with powdered sugar.
