Ingredients

  • 16 oz mushrooms (white button mushrooms, cremini, etc.)
  • 1.5 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 cup soda water or beer
  • 1/2 cup buttermilk or 1/2 cup milk + 1/2 lemon (juiced) OR 1 TBSP vinegar
  • 1 egg
  • 1/2 Tbsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sweet paprika
  • 1/2 tsp black pepper
  • 4-6 cups vegetable oil or canola oil, for frying
  • Handful of parsley (to garnish)

Instructions

  1. Clean mushrooms and pat dry.
  2. Mix flour, panko, salt, garlic powder, onion powder, paprika, and black pepper in a bowl.
  3. In another bowl, whisk egg, buttermilk (or substitute), and soda water (or beer).
  4. Dip mushrooms in the wet mixture, then coat with the dry mixture.
  5. Heat oil in a deep pan to 350°F (175°C).
  6. Fry mushrooms in batches until golden brown (3-4 minutes).
  7. Drain on paper towels.
  8. Garnish with parsley and serve hot.

Notes

  • Use fresh mushrooms for best texture.
  • Do not overcrowd the pan while frying.
  • Serve immediately for maximum crispiness.
