- 1 ½ pounds of boneless, skinless chicken, diced into 1-inch pieces
- 10 ounces of penne pasta
- ½ teaspoon of salt
- ¼ teaspoon of pepper
- 1 tablespoon of olive oil
- 3 tablespoons of butter
- 2 teaspoons of minced garlic
- 3 tablespoons of flour
- 2 cups of chicken broth
- 1 cup of heavy cream
- 1 cup of grated parmesan cheese
- 1 cup of sun-dried tomatoes, well-drained
- 1 teaspoon of paprika
- 2 teaspoons of dried Italian seasoning
- Fresh basil for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- Season the diced chicken with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and fully cooked. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant.
- Whisk in flour to create a roux, then gradually add chicken broth while stirring.
- Pour in heavy cream and stir until the sauce thickens.
- Add parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Stir until cheese melts.
- Return the cooked chicken to the skillet and mix well.
- Toss in the cooked pasta and stir until fully coated.
- Garnish with fresh basil and serve immediately.
Notes
- Use gluten-free pasta for a gluten-free version.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
