Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup blueberries (optional)
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons maple syrup (for glaze)
- 1-2 teaspoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix egg, buttermilk, vanilla, and melted butter.
- Combine wet and dry ingredients, stirring until just mixed.
- Fold in chocolate chips or blueberries if using.
- Spoon batter into mini muffin cups, filling each halfway.
- Bake for 10-12 minutes until golden and cooked through.
- Cool slightly before removing from the pan.
- For the glaze, whisk powdered sugar, maple syrup, and milk until smooth.
- Drizzle glaze over poppers and serve warm.
Notes
- Use a piping bag to easily fill mini muffin cups.
- Replace buttermilk with 3/4 cup milk mixed with 1 tsp vinegar if needed.
- Store leftovers in an airtight container for up to 2 days.
