Description

Small, fluffy pancake bites drizzled with maple glaze, perfect for a quick breakfast or snack.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup blueberries (optional)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons maple syrup (for glaze)
  • 1-2 teaspoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix egg, buttermilk, vanilla, and melted butter.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Fold in chocolate chips or blueberries if using.
  6. Spoon batter into mini muffin cups, filling each halfway.
  7. Bake for 10-12 minutes until golden and cooked through.
  8. Cool slightly before removing from the pan.
  9. For the glaze, whisk powdered sugar, maple syrup, and milk until smooth.
  10. Drizzle glaze over poppers and serve warm.

Notes

  • Use a piping bag to easily fill mini muffin cups.
  • Replace buttermilk with 3/4 cup milk mixed with 1 tsp vinegar if needed.
  • Store leftovers in an airtight container for up to 2 days.
