Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed sweet potatoes
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 1 cup buttermilk
  • 1/2 cup softened butter
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix cornmeal, flour, baking powder, and salt.
  3. In another bowl, combine mashed sweet potatoes, eggs, melted butter, honey, and buttermilk.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. While the cornbread bakes, mix softened butter and honey to make the honey butter.
  8. Let the cornbread cool slightly before serving with honey butter.

Notes

  • Use freshly mashed sweet potatoes for best results.
  • Adjust honey to taste if you prefer sweeter cornbread.
