- 1/2 small onion, grated
- 1/2 cup buttermilk
- 1 large egg, beaten
- 1/4 cup panko bread crumbs
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp baking powder
- Oil, for frying
Instructions
- Mix Jiffy Cornbread Mix, grated onion, buttermilk, beaten egg, panko bread crumbs, flour, salt, black pepper, and baking powder in a bowl.
- Heat oil in a deep fryer or skillet to 375°F.
- Drop spoonfuls of batter into the hot oil.
- Fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Serve warm.
