Ingredients

Scale
  • 2 cups cottage cheese
  • 3 large eggs
  • 2 cups frozen mixed veggies (peas, carrots, corn, or your favorite blend)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing the pan)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. In a bowl, mix cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
  4. Add frozen mixed veggies and shredded cheddar cheese. Stir well.
  5. Pour the mixture into the baking dish.
  6. Bake for 30-35 minutes or until set and golden on top.
  7. Let cool for 5 minutes before slicing.
