  • For the stew:
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Mix all meatball ingredients in a bowl until well combined.
  2. Shape the mixture into small meatballs.
  3. Heat olive oil in a large pot over medium heat.
  4. Add onion, carrots, and celery. Cook until softened.
  5. Add meatballs and cook until browned.
  6. Pour in beef broth and diced tomatoes.
  7. Season with thyme, paprika, salt, and pepper.
  8. Simmer for 20-25 minutes until meatballs are cooked through.
  9. Garnish with fresh parsley before serving.

Notes

  • You can use ground turkey instead of beef for a lighter version.
