- For the meatballs:
- 1 pound ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- For the stew:
- 1 tablespoon olive oil
- 1 onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Mix all meatball ingredients in a bowl until well combined.
- Shape the mixture into small meatballs.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add meatballs and cook until browned.
- Pour in beef broth and diced tomatoes.
- Season with thyme, paprika, salt, and pepper.
- Simmer for 20-25 minutes until meatballs are cooked through.
- Garnish with fresh parsley before serving.
Notes
- You can use ground turkey instead of beef for a lighter version.
- Freeze leftovers for up to 3 months.
- Serve with crusty bread for a complete meal.
