- 1 tsp cornstarch
- ¾ tsp baking powder
- ¼ tsp salt
- 1 ½ tbsp (21g) unsalted butter or coconut oil, melted and cooled slightly
- 1 large egg white, room temperature
- 1 ½ tsp vanilla extract
- ½ cup (96g) coconut sugar
- 2 tablespoons (40g) raspberry jam
- 2 tablespoons (40g) blackberry jam
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
- In another bowl, mix the melted butter or coconut oil, egg white, vanilla extract, and coconut sugar.
- Combine the wet and dry ingredients until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet.
- Use your thumb or a spoon to make an indentation in the center of each cookie.
- Fill each indentation with raspberry or blackberry jam.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
