Description

A delicious grilled cheese sandwich with gouda, roasted mushrooms, and onions for a rich and savory flavor.


Ingredients

  • 8 ounces mushrooms, sliced
  • 1 medium onion, sliced (the sweeter the better)
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 4 tablespoons butter
  • 4 slices bread of choice
  • 1 cup gouda, shredded

Instructions

  1. Preheat oven to 400°F.
  2. Toss mushrooms and onions with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20 minutes, stirring halfway.
  4. Heat a skillet over medium heat.
  5. Butter one side of each bread slice.
  6. Place one slice butter-side down in the skillet.
  7. Sprinkle half the gouda on the bread.
  8. Add roasted mushrooms and onions.
  9. Top with remaining gouda and the second bread slice, butter-side up.
  10. Cook until golden brown, about 3-4 minutes per side.
  11. Slice and serve hot.
