Ingredients

- 8 ounces mushrooms, sliced
- 1 medium onion, sliced (the sweeter the better)
- 2 tablespoons olive oil
- salt and pepper to taste
- 4 tablespoons butter
- 4 slices bread of choice
- 1 cup gouda, shredded
Instructions
- Preheat oven to 400°F.
- Toss mushrooms and onions with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes, stirring halfway.
- Heat a skillet over medium heat.
- Butter one side of each bread slice.
- Place one slice butter-side down in the skillet.
- Sprinkle half the gouda on the bread.
- Add roasted mushrooms and onions.
- Top with remaining gouda and the second bread slice, butter-side up.
- Cook until golden brown, about 3-4 minutes per side.
- Slice and serve hot.
