Ingredients

- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract
Instructions
- Mix dry ingredients (flour, sugar, baking powder, baking soda, cinnamon, salt) in a bowl.
- In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until combined.
- Heat a pan over medium heat and lightly grease with butter.
- Pour ¼ cup batter for each pancake.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm.

- Do not overmix the batter to keep pancakes fluffy.
