Description

Sweet and creamy pumpkin pie bars with a graham cracker crust. Perfect for fall gatherings or holiday desserts.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (15 oz) can pumpkin purée
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 (12 oz) can evaporated milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl until combined. Press firmly into the baking dish.
  3. Bake the crust for 10 minutes. Remove and let cool slightly.
  4. In a separate bowl, whisk pumpkin purée, 3/4 cup sugar, eggs, evaporated milk, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
  5. Pour the filling over the crust and bake for 35-40 minutes until set.
  6. Let cool completely before slicing. Top with whipped cream if desired.

Notes

  • Use pure pumpkin purée, not pumpkin pie filling.
  • Bars firm up as they cool.
  • Store leftovers in the refrigerator.
