Ingredients

  • 1 English cucumber, small diced
  • 3 green onions, thinly sliced
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime, zested and juiced (about 2 teaspoons zest and 2 tablespoons juice)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • ¼ teaspoon kosher salt

Instructions

  1. Peel and devein the shrimp.
  2. Dice the cucumber and thinly slice the green onions.
  3. In a bowl, combine mayonnaise, sour cream, lime zest, lime juice, dill, Dijon mustard, minced garlic, and salt to make the dressing.
  4. Mix the shrimp, cucumber, and green onions in a large bowl.
  5. Pour the dressing over the salad and toss to coat evenly.
  6. Refrigerate for at least 30 minutes before serving.
