Delicious chocolate peanut butter muffins that are easy to make and perfect for breakfast or snack.

- 3 cups (360g) all-purpose flour
- 1 cup (84g) natural unsweetened cocoa powder
- 1 ½ cup (300g) granulated sugar
- 4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 large eggs
- 1 ½ cup (360ml) buttermilk
- ½ cup (118ml) vegetable oil
- 1 tsp vanilla extract
- ⅔ cup (167g) creamy peanut butter
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, buttermilk, oil, and vanilla extract.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Add peanut butter and mix gently.
- Fill muffin cups ¾ full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Do not overmix the batter to keep muffins tender.
- Store in an airtight container for up to 3 days.
- For extra peanut butter flavor, swirl more on top before baking.
