Description

A refreshing and colorful Berry Caprese Salad perfect for the 4th of July. This salad combines sweet berries, creamy mozzarella, and a tangy balsamic maple dressing for a festive and delicious dish.


Ingredients

  • For the Balsamic Maple Dressing:
    • ½ cup olive oil
    • ¼ cup balsamic vinegar, good quality
    • 1 clove garlic, crushed
    • 2 tbsp pure maple syrup
    • ½ tsp dried thyme
    • pinch of salt & pepper
  • For the Salad:
    • 8 cups lettuce, mix of spinach and butter lettuce
    • 1 cup fresh blueberries
    • 1 cup fresh strawberries, quartered
    • 8 oz fresh mozzarella, sliced and cut (or hand torn) into 1 inch pieces
    • 4 tbsp pine nuts
    • ¼ cup fresh basil, thinly sliced

Instructions

  1. Prepare the dressing by whisking together olive oil, balsamic vinegar, crushed garlic, maple syrup, dried thyme, salt, and pepper in a small bowl.
  2. In a large salad bowl, combine the lettuce, blueberries, strawberries, and mozzarella.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Sprinkle pine nuts and fresh basil on top.
  5. Serve immediately and enjoy.

Notes

  • Use your favorite lettuce or salad mix.
  • Substitute mini mozzarella balls if preferred.
