- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha sauce
- 2 cups cooked rice
- 1 cup shredded lettuce
- 1/2 cup sliced cucumbers
- 1/2 cup shredded carrots
- Salt and pepper to taste
- Oil for frying
Instructions
- Season chicken with salt and pepper.
- Coat chicken in flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.
- Heat oil in a pan over medium heat and fry chicken until golden and cooked through, about 4-5 minutes per side.
- Drain on paper towels.
- Mix mayonnaise, sweet chili sauce, and sriracha in a bowl to make the Bang Bang sauce.
- Assemble bowls with cooked rice, shredded lettuce, cucumbers, and carrots.
- Top with fried chicken and drizzle with Bang Bang sauce.
- Serve immediately.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F internally.
- For extra crispiness, double-coat the chicken in breadcrumbs.
- Adjust sriracha to control spiciness.
