Ingredients

  • 1 small overripe banana, mashed (1/4 cup)
  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix mashed banana, oil or melted butter, brown sugar, egg yolk, and vanilla.
  3. In another bowl, whisk flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients until just mixed. Fold in chocolate chips.
  5. Scoop tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are golden.
  7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use a very ripe banana for the best flavor.
  • Do not overmix the dough to keep the cookies soft.
