Delicious cookies combining the flavors of banana bread and chocolate chips. Soft, chewy, and easy to make.
Ingredients

- 1 small overripe banana, mashed (1/4 cup)
- 1/2 cup vegetable oil or melted butter
- 1 cup light brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix mashed banana, oil or melted butter, brown sugar, egg yolk, and vanilla.
- In another bowl, whisk flour, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients until just mixed. Fold in chocolate chips.
- Scoop tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use a very ripe banana for the best flavor.
- Do not overmix the dough to keep the cookies soft.
- Store in an airtight container for up to 3 days.
