    • ¾ cup powdered sugar (icing sugar), sifted
    • 1 tsp vanilla extract
    • 1 cup cold heavy cream (or thickened cream)
  • For the Red Swirl:
    • 1 cup fresh strawberries, hulled and chopped
    • 2 tbsp granulated sugar
  • For the Blue Swirl:
    • 1 cup fresh blueberries
    • 2 tbsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the Crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into a 9-inch pie pan and bake for 8 minutes. Let it cool.
  3. Prepare the Swirls: Blend strawberries with sugar until smooth for the red swirl. Repeat with blueberries for the blue swirl.
  4. Make the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately, then fold into the cream cheese mixture.
  5. Assemble the Pie: Spread the filling into the crust. Drop spoonfuls of the red and blue swirl mixtures on top. Use a toothpick to swirl gently.
  6. Chill the pie for at least 4 hours before serving.

Notes

  • You can use frozen berries if fresh ones aren’t available. Thaw and drain them first.
