A festive dessert perfect for the 4th of July, this Swirl Pie combines a creamy filling with vibrant red and blue fruit swirls. The graham cracker crust adds a crunchy contrast to the smooth cheesecake-like filling.

- For the Crust:
- 1¼ cups graham cracker crumbs (about 10 full sheets)
- 3 tbsp granulated sugar
- 5 tbsp unsalted butter, melted
- For the Filling:
- 16 oz (450 g) cream cheese, softened
- ¾ cup powdered sugar (icing sugar), sifted
- 1 tsp vanilla extract
- 1 cup cold heavy cream (or thickened cream)
- For the Red Swirl:
- 1 cup fresh strawberries, hulled and chopped
- 2 tbsp granulated sugar
- For the Blue Swirl:
- 1 cup fresh blueberries
- 2 tbsp granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Make the Crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into a 9-inch pie pan and bake for 8 minutes. Let it cool.
- Prepare the Swirls: Blend strawberries with sugar until smooth for the red swirl. Repeat with blueberries for the blue swirl.
- Make the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately, then fold into the cream cheese mixture.
- Assemble the Pie: Spread the filling into the crust. Drop spoonfuls of the red and blue swirl mixtures on top. Use a toothpick to swirl gently.
- Chill the pie for at least 4 hours before serving.
Notes
- You can use frozen berries if fresh ones aren’t available. Thaw and drain them first.
- For deeper colors, add a few drops of food-safe red and blue gel colors.
- Serve cold for the best texture.
