- 1 cup (8 oz/225 g) block cream cheese, at room temperature
- 1 ⅓ cups (5 ⅓ oz/152 g) powdered sugar, sifted
- ½ teaspoon vanilla extract
- ¼ cup (2 fl oz/60 ml) heavy whipping cream
- Fruit Topping:
- 2½ cups (12 ½ oz/350 g) mixed fresh berries
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the sugar cookie crust by mixing flour, baking soda, baking powder, and salt in a bowl.
- In another bowl, beat butter and sugar until light and fluffy. Add egg and vanilla.
- Gradually mix dry ingredients into wet ingredients until combined.
- Press dough into a pizza shape on the baking sheet. Bake for 12-15 minutes or until golden. Let it cool.
- Make the cream cheese topping by beating cream cheese, powdered sugar, vanilla, and heavy cream until smooth.
- Spread the cream cheese mixture over the cooled crust.
- Arrange mixed berries on top in a decorative pattern.
- Chill for 30 minutes before serving.
